Sweet Potato Burgers




I've made these sweet potato burgers a couple times and love them! They are easy to make and healthy!

Ingredients (makes 4)
2 sweet potatoes
2 bulbs of roasted garlic
1 cup cannellini benas (rinsed and drained if canned)
2 garlic cloves, minced
1/3 cup panko bread crumbs
1/3 cup wheat flour
1 large egg
1 1/2 teaspoons smoked paprika
1 teaspoon onion powder
1 teaspoon salt
1/2 teaspoon pepper
1/8 teaspoon cumin
2-3 tablespoons olive oil
1 avocado, sliced
2/3 cup plain greek yogurt
extra salt and pepper for seasoning yogurt/cream

First, preheat the oven to 375 to roast the garlic. Cut off the top half - a little less than 1/4 of the garlic head. Put a little olive oil on it and roast in the oven for 45 minutes.


It comes out sweet and carmelized - its so yummy. You can squeeze it right out of the bulb once done.

Pierce potatoes all over with a fork and place on a paper towel, setting in the microwave. Microwave for 5 minutes, then flip and cook for 5 minutes more. Remove, slice in half and let cool until you can scoop out the flesh.



In a large bowl, coarsely mash beans with a fork. Add in sweet potato and mash together, then add in spices, salt and pepper, minced garlic, egg, bread crumbs and flour. Mix together until combined, then place bowl in the fridge for 15-20 minutes.

While mixture is chilling, combine yogurt with 2 bulbs (squeezed out) of roasted garlic cloves, and a sprinkle of salt and pepper in a blender or food processor. Process until smooth then set aside until ready to use.

Heat a large skillet over medium heat and add 2 tablespoons olive oil. Remove mixture from fridge and form into 4 equal patties, then place in the skillet once hot. Since the mixture can be wet and messy, do not move until they are fully cooked and golden on one side! This takes about 5-6 minutes. Then, add more oil if needed (this really helps cook them) and flip burgers very gently. Cook for another 5-6 minutes. Toast buns if desired.

This Week...


It's down to three ladies tonight! I was shocked when Des was sent home last week and I don't have a clue who he's leaning toward. Need a drinking game? Take a drink every time Sean says he's crazy about someone...only if you want to get hammered that is.

Have you tried spaghetti squash? Its a healthy alternative to spaghetti noodles - its low in carbs/calories and its delicious! I've made it with sun-dried tomatoes, spinach, onion and garlic and it was amazing. Even the boyfriend approved! I'm trying this recipe tonight!


Get organized!

This is definitely on my to-do list. I couldn't find anything to wear this morning and realized I need to re-organize my closet. When your closet is messy its hard to put together outfits! Organize by first sorting by type of garment, then by color. If necessary, break sections down further into sleeve and hem lengths.



 Personal favorite is the Taylor Swift Trouble remix (can't get enough of that song these days) He's a good friend of mine and would love for you to check out his SoundCloud!



If you haven't fell off the New Years workout bandwagon, good for you! I've been slacking this month! Time to step it up and get back in the gym...summer is right around the corner!
